Cooking Social Club: Homemade Fresh Basil Pesto


Fresh basil pesto is one of those recipes that proves great cooking doesn't have to be complicated. With just a handful of ingredients, this vibrant sauce can transform pasta, sandwiches, grilled proteins, and roasted vegetables while bringing fresh, homemade flavor to any meal.


At Cooking Skills & Social, pesto is one of our favorite foundational recipes because it teaches a simple but valuable lesson: quality ingredients and proper technique matter. We often use garlic confit in place of raw garlic, creating a smoother, richer pesto that highlights the freshness of the basil without overpowering it. This simple technique adds depth of flavor while keeping the recipe approachable for home cooks.


One of the reasons we love teaching recipes like pesto in our cooking classes is because they're endlessly useful. Once you've mastered a great homemade pesto, you'll find yourself reaching for it throughout the week as a sauce, spread, marinade, or finishing touch for countless dishes. It's simple, versatile, and a perfect example of how a few quality ingredients can create something truly memorable.


Homemade Fresh Basil Pesto

Ingredients

  • 8 oz fresh basil leaves

  • 1/2 cup olive oil

  • 3 oz garlic (or garlic confit)

  • 1 oz Parmesan cheese

  • Salt, to taste

  • Lemon juice, to taste


Preparation

  1. Add the garlic and olive oil to a small saucepan over very low heat.

  2. Cook gently until the garlic becomes soft and easily mashable. Avoid browning the garlic; the goal is to slowly break it down and mellow its flavor.

  3. Remove from heat and allow the garlic and oil to cool to room temperature.

  4. Remove the basil leaves from the stems, discarding any flowers or tough stem pieces.

  5. Add the basil and cooled garlic-oil mixture to a food processor.

  6. Pulse until the basil and garlic are finely blended.

  7. Transfer the mixture to a bowl and stir in the Parmesan cheese by hand.

  8. Season with a pinch of salt and a splash of lemon juice to taste.

  9. Store in the refrigerator for up to one week. For best results, top the pesto with a thin layer of olive oil before sealing to help prevent oxidation.

We regularly use garlic confit when making pesto at Cooking Skills & Social. The slow-cooked garlic adds incredible depth and sweetness while preserving the bright flavor of fresh basil. If you don't have garlic confit available, simply use the gently cooked garlic method above for a delicious homemade alternative.
