Unlike basic steamed rice, this recipe begins by sautéing onion, garlic, and cumin before lightly toasting the rice in olive oil and butter. The rice then simmers in flavorful stock before being finished with toasted almonds and fresh herbs.
The result is a fragrant and versatile side dish that pairs especially well with seafood, roasted chicken, grilled vegetables, and other Mediterranean favorites.
What Is Rice Pilaf?
Rice pilaf is both a dish and a method of preparing rice.
Instead of cooking the rice directly in water, the grains are first toasted in butter, olive oil, or another cooking fat with aromatics such as onion, garlic, herbs, and spices. Stock is then added, and the rice gently simmers until tender.
Toasting the rice adds flavor and helps the grains remain light and separate rather than becoming overly sticky.
This version includes toasted almonds for extra texture and fresh parsley for a bright finishing touch.
Ingredients
1½ cups basmati rice, rinsed and drained
3 cups low-sodium vegetable or chicken stock
½ cup slivered or sliced almonds
2 tablespoons extra virgin olive oil
1 tablespoon unsalted butter
1 small yellow onion, finely diced
2 cloves garlic, minced
1 teaspoon ground cumin
Salt, to taste
Freshly ground black pepper, to taste
¼ cup fresh parsley, finely chopped
How to Make Mediterranean Almond & Rice Pilaf
1. Rinse the rice
Place the basmati rice in a fine-mesh strainer and rinse it thoroughly under cold running water.
Rinsing removes some of the excess starch from the outside of the grains, helping the finished rice remain light and fluffy.
Allow the rice to drain well before adding it to the pan. If the rice is too wet, it may steam instead of properly toasting.
2. Toast the almonds
Place a large saucepan or deep skillet over medium-low heat.
Add the almonds directly to the dry pan and toast them for approximately three to four minutes, stirring frequently.
Once the almonds are lightly golden and fragrant, transfer them to a plate or bowl and set them aside.
Keep a close eye on the almonds because they can burn quickly once they begin to brown.
3. Sauté the onion
Return the same pan to medium heat and add the olive oil and butter.
Once the butter has melted, add the diced onion.
Cook for approximately five minutes, stirring occasionally, until the onion has softened and become translucent.
4. Add the garlic and cumin
Add the minced garlic and ground cumin to the softened onion.
Cook for approximately one minute, stirring continuously, until fragrant.
Avoid letting the garlic brown, as burned garlic can add a bitter flavor to the finished rice.
5. Toast the rice
Add the rinsed and drained basmati rice to the pan.
Stir continuously for approximately two minutes, making sure the grains are evenly coated in the seasoned olive oil and butter.
This step adds a subtle toasted flavor and helps keep the grains separate during cooking.
6. Add the stock
Pour the vegetable or chicken stock into the pan.
Add a small amount of salt and freshly ground black pepper, then stir once to combine.
Increase the heat and bring the liquid to a rapid boil.
7. Simmer the rice
Once the stock reaches a boil, reduce the heat to low and cover the pan tightly with a lid.
Allow the rice to gently simmer for approximately 15 to 20 minutes, or until the liquid has been absorbed and the grains are tender.
Avoid repeatedly lifting the lid while the rice cooks. Releasing the steam may interrupt the cooking process and cause the rice to cook unevenly.
8. Let the rice rest
Remove the pan from the heat but leave it covered.
Allow the rice to rest for five to 10 minutes. This gives the grains time to finish steaming and absorb any remaining moisture.
9. Fluff and finish
Remove the lid and gently fluff the rice with a fork.
Fold in the toasted almonds and freshly chopped parsley. Taste the pilaf and adjust the salt and black pepper as needed.
Serve warm alongside your favorite seafood, meat, or vegetable entrée.
Chef Tips for Light and Fluffy Rice Pilaf
Rinse the rice until the water becomes noticeably clearer. Removing excess surface starch will help prevent sticky or clumped rice.
Drain the rice thoroughly before toasting it in the pan.
Use low-sodium stock so you have more control over the final seasoning.
Once the stock begins boiling, immediately reduce the heat and keep the pan covered.
Do not skip the resting time. Allowing the covered rice to sit after cooking helps the moisture distribute evenly.
Fluff the rice gently with a fork rather than aggressively stirring it. Stirring too much can break the grains and create a heavier texture.
Add the toasted almonds shortly before serving if you want them to maintain their crunch.
Make It Your Own
This Mediterranean Almond and Rice Pilaf is flavorful as written, but it can easily be customized.
Try adding golden raisins, chopped dried apricots, lemon zest, fresh mint, dill, toasted pine nuts, chickpeas, roasted red peppers, or a small pinch of turmeric.
For a vegetarian version, use vegetable stock. For a fully vegan version, replace the butter with an additional tablespoon of olive oil or your favorite plant-based butter.
