Cooking Social Club: Beef Pot Pie Recipe!

Rich, hearty, and packed with deep savory flavor, this week's recipe is a true comfort food classic. Our Beef Pot Pie combines tender chunks of slow-braised chuck roast with earthy mushrooms, sweet carrots, and fresh peas — all tucked beneath a golden, flaky crust.
The filling is built with a red wine and beef broth braise that develops incredible depth of flavor, while the buttery pie dough on top bakes up perfectly crisp. Whether you make it in a Dutch oven or a crock pot, this is the kind of dish that fills the whole house with an amazing smell and brings everyone to the table.
Beef Pot Pie
Ingredients
1 (2¼-pound) boneless beef chuck roast / chuck steak, trimmed and cut into ¾-inch pieces
Salt and pepper
3 tablespoons vegetable oil
4 ounces OR 3 medium cremini mushrooms, trimmed and quartered
1 onion, chopped fine
2 carrots, peeled and cut into ½-inch pieces
2 tablespoons tomato paste
4 garlic cloves, minced / smashed and chopped
½ cup dry red wine (Pinot Grigio or Sav. Blanc — just not Chardonnay)
3 tablespoons all-purpose flour
1¾ cups beef broth (you can easily make your own by roasting and simmering the trimmings from the roast)
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 bay leaves
1 cup peas
1½ teaspoons chopped fresh thyme
1 large egg, lightly beaten
1 (9-inch) pie dough (your preference of frozen or roll your own)
Instructions
Brown the Beef Adjust oven rack to lower-middle position and heat oven to 350 degrees. Pat beef dry with paper towels and season with salt and pepper. Heat 1½ tablespoons oil in a Dutch oven (or a heavy, deep skillet like a Sautern) over medium-high heat until just smoking. Add half of the beef and cook until well browned all over, 7 to 10 minutes. Using a slotted spoon, transfer beef to a bowl with the remaining uncooked beef. We will use the same Pan to brown all meats and veg for increased flavor.... so dont get all smoky, smoky, burny, burny...
Cook the Vegetables Add remaining 1½ tablespoons oil to the now-empty pot and reduce heat to medium. Add mushrooms, onion, and carrots and cook until vegetables are lightly browned, about 5 minutes, scraping up any browned bits. Stir in tomato paste and garlic and cook until fragrant, about 30 seconds. IF YOU WANT TO USE A CROCK POT... simply use a heavy sauté pan for the browning and transfer to the crock pot. Cook the beef about 4 hours minimum, then transfer out of the crock pot into a deep sauté pan to finish the rest of the process.
Build the Braising Liquid Stir in wine and cook until evaporated, about 2 minutes. Stir in flour until vegetables are well coated and cook for 1 minute. Stir in broth, soy sauce, Worcestershire, and bay leaves until combined. Add beef and bring to a simmer. Cover and transfer to oven. Cook until beef is tender, about 1¼ hours.
Prepare the Filling Remove filling from oven and increase oven temperature to 400 degrees. Transfer filling to a 9-inch deep-dish pie plate; discard bay leaves. Let filling cool, uncovered, for 30 minutes. Stir in peas and 1 teaspoon chopped thyme. Season with salt and pepper to taste.
Top with Dough Brush rim and interior lip of pie plate with egg. Top filling with pie dough so dough overhangs edges of pie plate slightly. Fold overhanging pie dough inward so folded edge is flush with inner edge of pie plate. Crimp dough evenly around edge of pie using your fingers.
Vent and Bake Using a paring knife, cut a ½-inch hole in center of pie. Cut six ½-inch slits around hole, halfway between center and edge of pie. Brush dough with remaining egg, then season with salt, pepper, and remaining ½ teaspoon chopped thyme. Transfer pie to a rimmed baking sheet and bake until crust is golden brown, about 30 minutes. Transfer pie to a cooling rack and let cool for 20 minutes. Serve.
Chef Tips for the Perfect Beef Pot Pie
Use Chuck Roast Chuck roast has the right amount of fat and connective tissue to become perfectly tender during the long braise. Don't swap it for a leaner cut — it won't have the same richness or texture.
Skip the Chardonnay A dry white like Pinot Grigio or Sauvignon Blanc works great here, or use a light red. Chardonnay is too buttery and rich for this dish and can throw off the flavor of the braise.
Make Your Own Broth If you have roast trimmings, roasting and simmering them into a quick broth will elevate the entire dish. It's an easy step that makes a big difference in depth of flavor.
Don't Rush the Cooling Step Letting the filling cool for 30 minutes before topping with dough is important. Adding the crust to a hot filling can lead to a soggy bottom — patience pays off here.
Crimp the Edges Well A good crimp keeps the crust sealed and the filling from bubbling out over the sides. Take your time pressing and folding the dough along the rim of the pie plate.
The Crock Pot Option Works Great If you're short on oven time, the crock pot method is a reliable alternative. Just make sure to do the browning on the stovetop first — that step is essential for building flavor.
