Fresh, colorful, and packed with flavor, this week’s recipe brings the taste of Hawaii straight to your kitchen. Our Authentic Shoyu Ahi Poke Bowl combines sushi-grade ahi tuna, ripe mango, scallions, and toasted sesame seeds in a savory shoyu-sesame dressing.


Served over seasoned sushi rice with a crisp scallion and cucumber salad, this homemade poke bowl is light, refreshing, and surprisingly simple to prepare. Finish it with avocado, furikake, nori strips, or your favorite garnishes to make it your own.


Authentic Shoyu Ahi Poke Bowl

Yield: 1 bowl Prep Time: 15 minutes Cook Time: 20 minutes Total Time: 35 minutes


Ingredients

Sushi Rice

  • ½ cup uncooked sushi rice, yielding approximately 1 cup cooked

  • ¾ cup water


Rice Seasoning

  • 1 tablespoon rice vinegar

  • 1 teaspoon sugar

  • ¼ teaspoon salt


Ahi Poke

  • 5 ounces sushi-grade ahi tuna, cut into ½-inch cubes

  • ½ cup ripe mango, diced

  • 2 tablespoons scallions, thinly sliced

  • 1 teaspoon toasted sesame seeds


Shoyu Dressing

  • 1 tablespoon soy sauce or shoyu

  • 1 teaspoon toasted sesame oil

  • 1 teaspoon teriyaki sauce

  • ½ teaspoon freshly grated ginger

  • ½ teaspoon honey, optional


Scallion Nest Salad

  • 2 tablespoons scallions, very thinly sliced

  • ¼ cup shredded cucumber

  • 1 teaspoon rice vinegar

  • Pinch of salt


Optional Garnishes

  • Avocado slices

  • Pickled ginger

  • Nori strips

  • Furikake seasoning

  • Microgreens

  • Extra sesame seeds

  • Lime wedge


Instructions

1. Cook and Season the Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice with ¾ cup of water according to the package directions.

While the rice is still warm, combine the rice vinegar, sugar, and salt. Gently fold the seasoning into the cooked rice without crushing the grains. Allow the rice to cool until it is slightly warm or at room temperature.


2. Prepare the Shoyu Dressing

In a small bowl, whisk together the soy sauce, toasted sesame oil, teriyaki sauce, freshly grated ginger, and honey, if using.

Taste the dressing and adjust it as needed. A little honey provides sweetness, while additional ginger creates a brighter, sharper flavor.


3. Make the Ahi Poke

In a chilled bowl, gently combine the cubed ahi tuna, diced mango, sliced scallions, and toasted sesame seeds.

Pour the shoyu dressing over the mixture and gently toss until everything is evenly coated. Refrigerate for 5–10 minutes while preparing the scallion nest salad.


4. Prepare the Scallion Nest Salad

Combine the thinly sliced scallions, shredded cucumber, rice vinegar, and a pinch of salt.

Toss lightly to keep the vegetables crisp and refreshing.


5. Assemble the Poke Bowl

Spoon the seasoned sushi rice into a serving bowl. Arrange the ahi poke over one side of the rice and place the scallion nest salad beside it.

Add avocado slices if desired, then finish the bowl with furikake, sesame seeds, nori strips, microgreens, or pickled ginger. Serve immediately with a fresh lime wedge.


Chef Tips for the Perfect Poke Bowl

Always Use Sushi-Grade Tuna

Because the ahi tuna is served raw, purchase sushi-grade fish from a reputable seafood market or trusted supplier. Keep it refrigerated until you are ready to cut and serve it.

Use a Sharp Knife

A very sharp knife will help you create clean, even cubes without tearing or crushing the tuna. Cut the tuna while it is thoroughly chilled for the best results.


Do Not Over-Marinate the Tuna

The shoyu dressing adds plenty of flavor in just a few minutes. Allowing the tuna to sit in the dressing for too long can change its texture and overpower its fresh flavor.


Let the Rice Cool

Avoid placing raw tuna directly over steaming-hot rice. Slightly warm or room-temperature rice keeps the tuna chilled while preserving the texture of the fish.


Make It Your Own

Poke bowls are easy to customize. Try adding edamame, shredded carrots, radishes, seaweed salad, spicy mayonnaise, or crispy onions. You can also replace the tuna with cooked shrimp, salmon, tofu, or another protein of your choice.
