Cooking Social Club: Homemade Crepes with Mascarpone Filling Recipe!


Light, delicate, and filled with a rich mascarpone cream, homemade crepes are a brunch favorite that feels special without requiring complicated ingredients. The simple batter can be prepared by hand or blended until smooth, making this recipe approachable for cooks of every experience level.


The mascarpone filling is flavored with a homemade brown sugar syrup and your choice of cinnamon or allspice. Add as much of the syrup as you like to control the sweetness, then pipe the creamy filling into each freshly prepared crepe.


These homemade crepes with mascarpone filling are featured in this week’s Recipe of the Week and inspired by the menu from our hands-on brunch cooking class at Cooking Skills & Social in Itasca.


What Are Crepes?

Crepes are thin, flexible pancakes traditionally associated with French cuisine. Unlike fluffy American pancakes, crepes do not contain baking powder or another rising agent. This creates a soft, delicate texture that can be folded or rolled around a variety of sweet and savory fillings.


This version uses a lightly sweetened batter paired with a whipped mascarpone filling, making it a delicious choice for brunch, dessert, or a special weekend breakfast.


Crepe Ingredients

  • 2 cups milk

  • 4 large eggs

  • 1½ cups all-purpose flour

  • 3 tablespoons granulated sugar

  • 3 tablespoons melted butter


How to Make the Crepe Batter

There are two easy ways to prepare your homemade crepe batter.


Method One: Mixing Bowl

Add the milk, eggs, flour, sugar, and melted butter to a large mixing bowl.

Whisk the ingredients together until the batter is smooth and no large lumps remain.


Method Two: Blender

Add all of the ingredients to a blender.

Blend until the mixture is completely smooth. Be careful not to blend longer than necessary, as this can add too much air to the batter.


How to Cook Homemade Crepes

Heat a lightly buttered nonstick skillet or crepe pan over medium heat. Pour a small amount of batter into the center of the pan. Immediately tilt and rotate the pan so the batter spreads into a thin, even layer.


Cook until the edges begin to lift and the bottom is lightly golden. Carefully flip the crepe and briefly cook the second side.


Transfer the finished crepe to a plate and continue with the remaining batter, lightly buttering the pan as needed.


Mascarpone Filling Ingredients

  • 16 ounces mascarpone cheese

  • 1 cup brown sugar

  • 1/2 cup water

  • 1 tablespoon allspice or cinnamon


How to Make the Mascarpone Filling

Add the brown sugar, water, and your choice of allspice or cinnamon to a small saucepan.

Place the saucepan over low heat and stir occasionally until the brown sugar has completely dissolved. Once dissolved, remove the syrup from the heat and allow it to cool to room temperature.


While the syrup cools, whip the mascarpone until it reaches a stiff peak. The mascarpone may begin to look slightly dry as it is whipped.

Gradually add the cooled brown sugar syrup to the whipped mascarpone. Continue adding the syrup until the filling reaches your preferred level of sweetness and consistency. You may not need to use all of the syrup.


For easier filling, spoon the mascarpone mixture into a piping bag.

Pipe the filling into the center of each crepe before rolling or folding it for serving.


Chef Tips for Better Homemade Crepes

Use room-temperature syrup. Make sure the brown sugar syrup has fully cooled before adding it to the mascarpone. Warm syrup can soften the filling too much.


Add the syrup gradually. Slowly incorporating the syrup allows you to control both the sweetness and texture of the mascarpone filling.


Keep the crepes thin. Use only enough batter to lightly coat the bottom of the pan.


Watch the pan temperature. If the pan is too hot, the batter may cook before you have time to spread it evenly.


Do not overfill the crepes. A moderate amount of mascarpone makes the crepes easier to fold, roll, and serve.


Serving Suggestions

Finish your mascarpone-filled crepes with:

  • Fresh strawberries, raspberries, or blueberries

  • Powdered sugar

  • Warm berry sauce

  • Maple syrup

  • Chocolate drizzle

  • Toasted nuts

  • Fresh lemon zest

  • Whipped cream
