You'll dive into making melt-in-your-mouth braised short ribs with red wine and porcini cream, roll out pillowy potato gnocchi that gets tossed in brown butter and basil puree, and fill crispy cannoli shells with sweet ricotta that honestly might be better than Nona's (don't tell her we said that).
